When the Native Americans heard gunshots they prepared for war but soon realized that the English were only hunting for a harvest celebration. The Native Americans joined them on the deer hunt (sorry, no turkeys) for the feast and for three days, the English and native men, women, and children ate together. The meal consisted of deer, corn, shellfish, and roasted meat, not exactly today’s traditional Thanksgiving meal.
However, since corn has survived in modern Thanksgiving celebrations, I share with you my sister-in-law’s secret corn casserole recipe:
Kathy’s Amazing Corn Casserole
1 box Jiffy corn muffin mix
1 can creamed corn
1 can regular corn
1 cup sour cream
½ lb butter
2 extra lg eggs beaten
2 tablespoon sugar
Mix together and cook for approximately 1 hr 375 degrees.
It should not be cakelike but a little mushy inside. Serves 6-8
(When Kathy makes this she quadruples the recipe for her 60 or so guests!
